WHIPPED STRAWBERRY BUTTER
1 cup strawberries
1/2 cup (1 stick) unsalted butter, at room temperature
2 tablespoons confectioner’s sugar
In a large bowl, crush strawberries using the back of a spoon or a potato masher; set aside.
In the bowl of an electric mixer fitted with paddle attachment, beat butter on medium speed until light and fluffy, about 2-3 minutes. With mixer on low speed, add crushed strawberries and confectioners’ sugar, beating just until incorporated.
Serve immediately.*
NOTES:
*This can be stored in the refrigerator for up to 2 weeks. Bring to room temperature, about 15 minutes, prior to serving.
