Boston Cream Poke Cake

Boston Cream Poke Cake

1 box yellow cake mix
ingredients needed to make cake; eggs, oil and water
2 (3.4oz) boxes instant Vanilla or French Vanilla pudding
4 cups milk
1 tub Chocolate Frosting
Directions:
Make cake mix according to directions and bake in a well-greased 9x13 pan.

When cake is finished, while still warm, poke holes all over cake (about 1-inch) intervals using a wooden spoon handle
or other similar size object.

In a medium bowl, add milk to pudding mixture and continue to whisk until most of the lumps are removed.
Let pudding mixture sit for about 2 minutes. You want it to thicken just slightly so it isn't overly runny but
not fully thickened into pudding (it should still be pourable).
Pour pudding on top of warm cake.
Take a spoon and spread it out. Gently press down to ensure that pudding goes
into the holes and spread it all the way to the sides.
Remove the lid and foil covering from the tub of chocolate frosting.
Pop it in the microwave on high for about 30-45 seconds.
Stir with a spoon. It should now be pourable but not bubbly hot.
Pour chocolate frosting on top of pudding.
Spread frosting to evenly cover cake. Start in the middle and gently spread to the sides.
Allow to cool on the counter for a few minutes, then put into the fridge to fully cool and set up.
Once it is completely cooled, you can cover it with a lid without worrying about any condensation on the lid.
This cake needs to be kept refrigerated

Cough-Be-Gone & Sore Throat Syrup

Cough-Be-Gone & Sore Throat Syrup:
This syrup for sore and inflamed throats is a much tastier recipe than my sore throat gargle.
4 parts fennel seed
2 parts licorice root
2 parts slippery elm bark
2 parts valerian
2 parts wild cherry bark
1 part cinnamon bark
1/2 part ginger root
1/8 part orange peel
Make a syrup as instructed (*here). Take 1 to 2 teaspoons every hour or two throughout the day, or use whenever a bout of coughing starts up.

*Syrups
Syrups are the yummiest of all herbal preparations. They are delicious, concentrated extracts of the herbs cooked into a sweet medicine with the addition of honey and/or fruit juice. Maple syrup and vegetable glycerin may be substituted for honey.
Although there is more than one method for making an herbal syrup, I have been using this technique for many years, and it makes excellent syrups, time after time.
Step 1. Use 2 ounces of herb mixture to 1 quart of water. Over low heat, simmer the liquid down to 1 pint. This will give you a very concentrated tea.
Step 2. Strain the herbs from the liquid. Pour the liquid back into the pot.
Step 3. To each pint of liquid, add 1 cup of honey (or other sweetener, such as maple syrup, vegetable glycerin, or brown sugar). Most recipes call for 2 cups of sweetener (a 1:1 ratio of sweetener to liquid). I find this far too sweet for my taste, but the added sugar helped preserve the syrup in the days when refrigeration wasn’t common.
Step 4. Warm the honey and the liquid together only long enough to mix well. Most recipes instruct you to cook the honey and the tea together for 20 to 30 minutes over high heat to thicken further. It certainly does make thicker syrup, but I’d rather not cook the living enzymes out of the honey.
Step 5. When the syrup is thoroughly mixed, you may wish to add a fruit concentrate to flavor, or a couple of drops of essential oil, such as peppermint or spearmint, or a small amount of brandy to help preserve the syrup and to aid as a relaxant in cough formulas.
Step 6. Remove from the heat, bottle, and label. Syrups will last for several weeks, even months, if refrigerated

Sore Throat Gargle

Sore Throat Gargle:
This is my favorite gargle for sore throats and laryngitis; however, I’m the first to admit that it’s not my tastiest recipe.
1 cup apple cider vinegar
1 cup strong (triple strength) sage tea
2 to 3 teaspoons salt
pinch of cayenne
Combine all ingredients. Gargle with this mixture frequently throughout the day

Throat Soother Tea

Throat Soother Tea:
This tea strengthens the voice and soothes throat irritation:
2 parts licorice root
1 part cinnamon
1 part echinacea
1 part marsh mallow root
1/8 part ginger
Decoct the herbs as instructed (*below). Drink several cups of tea a day.

*Decoctions
Decoctions are made from the more tenacious parts of the plant, such as the roots, bark and seeds. It’s a little harder to extract the constituents from these parts, so a slow simmer (or an overnight infusion) is often required.
To make a decoction, place the herbs in a small saucepan and cover with cold water. Heat slowly and simmer, covered, for 20 to 25 minutes. The longer you simmer the herbs, the stronger the tea will be

1 (16 ounce) can corn, drained
6 corn tortillas

Brown beef, onion & garlic in skillet. Pour off excess fat and season with your salt & pepper. In a large bowl mix all ingredients (it makes it alot easier and less time consuming) Reserve a small amount of cheese to top last layer.
Wipe the inside of crock pot with oil (or spray with spray pam) Place a tortilla in the bottom of the pot and spoon some of the mixture onto tortilla.
( I use a ladle, as it is less messy) Continue with layers finishing with reserved cheese on top.
Cover and cook at low for 5-7 hours. Can be served with additional warmed tortillas.

variations: Add chorizo sausage, canned green chili peppers or substitute stuffed green olives for black ones. Make with cooked chicken or turkey instead of beef

Mustard Fried Chicken Wings

Mustard Fried Chicken Wings

5 pounds chicken wings, separated at joints, tips discarded
1 tablespoon seasoned salt
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons ground black pepper
3 tablespoons prepared yellow mustard
3 cups flour
1 quart oil for frying, or as needed

Season the chicken wings on both sides by sprinkling with seasoned salt, garlic powder, onion powder, pepper. I like to lay it all out on a big plastic bag for easier clean up. Coat each piece with a thin layer of mustard. You may use a basting brush or your fingers. Put the flour into a plastic bag, add the chicken, and shake to coat. Heat the oil in a deep-fryer or deep heavy skillet to 350 degrees. When the oil is hot, add the chicken and cook for 6 minutes on each side, or until juices run clear. Drain on paper towels, and cool for 5 minutes before serving
