CHICKEN BOMBS
1 boneless skinless chicken breast
2 tablespoons cream cheese
1 tablespoon green onion, Chopped
2 pieces bacon, Partially Cooked
Pound out Chicken breast so it is about 1/4″ thick.
Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast.
Roll CHicken breast up to conceal cream cheese.
Wrap partially cooked bacon around chicken breast and secure with toothpick.
Place on baking sheet and back for about 30 minutes at 375.
Broil for about 5 minute to crisp bacon.
BACON RANCH CABBAGE
BACON RANCH CABBAGE
1 bag of precut cabbage mix
1/2 lb cooked bacon
1 onion .. chopped
1 envelope ranch seasoning mix
2 T. olive oil
Cook your bacon .. drain set aside .. chop onions and caramelize in olive oil… add cabbage and onions… cook down…add ranch mix and bacon.. continue to cook down to desired tenderness
Mexican Tuna Salad
Mexican Tuna Salad
1/2 tomato diced
1/2 green bell pepper diced
1/2 white onion diced
1 can if sweet corn drained
2 cans of albacore tuna drained
1 tbsp of lime juice
1 tbsp of lemon juice
Salt and pepper to taste
Add all ingredients together and put in the fridge to chill for at least 30 mins. Serve on wheat crackers

1 large head of Lettuce
1 lb. Cheddar Cheese, grated
2 tomatoes, diced
green onions, finely sliced
1 (15 oz) can Ranch Style Beans, chilled
3/4 bottle Catalina dressing, chilled
1/2 package Fritos, crushed
Prepare lettuce as for any tossed salad. Drain and wash chilled beans; add these, the diced tomatoes, sliced green onions, grated cheese, and dressing. Chill 30 minutes to an hour before serving. Crushed Fritos are added and mixed well immediately before serving. Generously serves 10.
optional items that can be added:
1 lb. ground beef cooked with steak seasoning, onion powder, and garlic powder; pace picante sauce for zing

1 roll (or 2) of Grand sized biscuits
1/2 stick of REAL butter
Garlic powder
Parsley
Cut each biscuit into quarters. Place quartered biscuits in a large bowl. In another small bowl melt butter in the microwave.
Add enough garlic and parsley to taste great. Stir seasoned butter mixture. Pour butter over biscuit quarters. Toss until well coated. Place butter coated biscuit quarters in a Bundt pan, piece by piece. Drizzle any left over seasoned butter over the top for all of that buttery goodness to soak in. YUM! Bake at 350 degrees until well browned… About 25 minutes. Place a plate over the Bundt pan and flip. That’s all there is to it
Roasted Butternut Squash

1 med butternut squash
1 tbsp butter
1 tbsp maple syrup (or brown sugar)
1 tsp rosemary
Dash salt & pepper to taste
Dash cayenne pepper
Peel and chop squash into bite size pieces. Spread out over a baking sheet (with rim) Sprinkle all ingredients over the top,
Bake at 375 until tender…(about 35 minutes)
STUFFED BREAKFAST PEPPERS
STUFFED BREAKFAST PEPPERS
Serves 2
1/4 lb. chorizo or sausage
1/4 small onion, chopped
1 garlic clove, minced
3 eggs, slightly beaten
1/8 c. milk
1/4 c. mozzarella cheese, shredded
handful of fresh parsley, chopped
2 bell peppers, seeded and cleaned
salt and pepper to taste
Pre-heat oven to 350°F. Cook chorizo or sausage in skillet until it starts to brown. Add onion and garlic. Blend together well. Continue to cook for an additional 3 minutes. Place eggs, cheese, salt, pepper, cheese and milk in a bowl and blend together with wire whisk until combined well. Put cooked and drained chorizo in bowl with egg mixture and mix well. Pour your mixture into each bell pepper and put them into a shallow baking dish. Bake 35-40 minutes or until you can tell the eggs are thoroughly cooked.
