CREAMY BROCCOLI BACON BAKE
6 cups small broccoli florets
2 carrots, sliced
1 tub (8 oz.) Cream Cheese Spread
2 Tbsp. milk
1 tsp. garlic powder
2 green onions, sliced
3/4 cup Shredded Triple Cheddar Cheese with a TOUCH CREAM CHEESE
4 slices Fully Cooked Bacon, chopped
HEAT oven to 425°F.
ADD broccoli and carrots to saucepan of boiling water; cook 2 to 3 min. or until crisp-tender. Drain, reserving 1/4 cup cooking water. Meanwhile, mix next 3 ingredients until blended.
RETURN cooked vegetables to saucepan. Add cream cheese mixture and onions; stir until vegetables are evenly coated with sauce, adding reserved cooking water if necessary for desired consistency.
SPOON into 2-qt. casserole sprayed with cooking spray; top with shredded cheese and bacon. Cover.
BAKE 25 min. or until heated through, uncovering for the last 5 min.
Strawberry Cream Cheese Cobbler
Strawberry Cream Cheese Cobbler
1 stick ( 1/2 cup) butter
1 egg, lightly beaten
1 cup milk
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 quarts whole strawberries, capped and washed (you can use as many strawberries as you want)
4 ounces cream cheese, cut in small pieces
Preheat oven to 350 degrees. Melt butter and pour into a 9-by-13-inch glass baking dish. In a small bowl, mix together the egg, milk, flour, sugar, baking powder, and salt. Pour directly over the butter in the baking dish, but do not stir.
Add the strawberries, arranging in a single layer as much as possible. Sprinkle cream cheese pieces over strawberries. Place in preheated oven and bake for 45 minutes, or until top is golden brown and edges are bubbling. (Crust rises up and around the fruit, but fruit will still peek out of top.

Mexican Mess (Bean Dip)
1 (16 ounce) cans fat-free refried beans
1 cup salsa ( I like medium)
4 ounces green chilies
1 cup cheese, shredded ( I like a Mexican or taco blend)
Spray a pie plate.
Mix all ingredients and place in pie plate.
Bake at 350 degrees for about 15 minutes or hot in the center.
Add extra cheese and anything else you want on top

1 can sweetened condensed milk
2 cups crushed pineapple, drained well
1 can strawberry pie filling
1 can cherry pie filling
12 oz. tub cool whip
3/4 cup pecans, chopped
Fold all ingredients together. Chill and serve.
Cucumber Salsa

2 medium cucumbers, peeled,seeded,chopped
2 medium tomatoes, chopped
1/2 cup green bell pepper, chopped
1 jalapeno pepper, seeded,minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons fresh lime juice
1 teaspoon fresh parsley, minced
2 teaspoons fresh cilantro, minced
1/2 teaspoon dried dill weed
1/2 teaspoon salt
In a medium bowl stir together all ingredients.
Cover and refrigerate at least one hour.
Serve with tortilla chips
Cheese Dip
Cheese Dip
Try it with jalapeño jack or chipotle seasonings if you like a kick…otherwise, stick to the cheddar.
1 8 oz. package cream cheese
2 cups grated cheddar cheese OR grated jalapeño jack
1 cup mayonnaise
1 small purple onion, diced (you can use chopped green onions as well or omit onions if you don’t like them)
◦Serve with Wheat Thins or Frito’s Scoops for dipping or evenVeggies
Place all ingredients in a shallow baking dish (a 9″ square pan or round quiche pan will be perfect!)
Microwave on high for about 2 minutes or until the ingredients are melted enough to stir together.
Stir until combined.
Bake at 350 for 20 minutes or until lightly browned.
Serve with Wheat Thins or Frito’s Scoops for dipping
