Pizza Casserole

Pizza Casserole 1/2 lb Bowtie Pasta 3/4 lb Breakfast Sausage - brown with onions and drain 1 medium onion - chopped 1 jar favorite Spaghetti Sauce (I used Mushroom) 1/4 lb sliced ham 1/2 package pepperoni 8 oz Mozzarella cheese 6 T. grated/dry parmesan cheese 1 tsp garlic powder 1/2 teaspoon Italian Seasoning Can Mushrooms Brown sausage with onions and Italian Seasoning....drain well Cook pasta as directed on package and drain. Lightly spray 9 inch square pan. Put about 1/2 cup pasta sauce in bottom of pan. Put 1/2 bowtie pasta over the sauce, then layer with thin layer of sauce, then sausage/onion mixture, then 1/2 of sliced ham, then 1/2 the parmesan cheese, 1/2 pepperoni slices, 1/2 mushrooms, then 1/2 mozzarella cheese and top with more spoons of sauce then start layering the remaining ingredients, starting again with the pasta -- make sure the last two layers are the pepperoni and then the remaining mozzarella cheese on top. Bake at 350 for about 30 - 45 minutes or until cheese begins to brown (or less if you don't want it brown). Let rest for 5 minutes before cutting. Note it's kind of like lasagna, but with a pizza type taste. We loved it!

Marshmallow Squares

Marshmallow Squares 1⁄2 cup peanut butter 1 (12 ounce) package butterscotch chips 1⁄2 cup butter 3 cups mini marshmallows Melt butter, chips, and peanut butter together on low heat. Cool, add marshmallows. Pour into 8x8 pan to set.

Mac n' Cheesy Chicken Stuffed Shells

Mac n' Cheesy Chicken Stuffed Shells 3-4 tbsp butter 12 oz evaporated milk 10.5 oz condensed cheddar cheese soup 8 oz brick cream cheese 2 cups shredded precooked chicken (i used a rotisserie chicken) 1 1/4 cup shredded cheddar cheese divided (i used mild, but whatever strikes your fancy) 12 cooked jumbo pasta shells Melt the butter on medium heat over the stove and add cheese soup. wisk until soup is less lumpy. add evaporated milk gradually while wisking until smooth. add 1/2 cup to 1 cup cheddar cheese gradually and continue to wisk as cheese melts. allow cheese to melt thoroughly before adding too much. you should have a thick velveeta-like cheese sauce that is a thick, yet pour-able consistency with no lumps or stringiness. soften cream cheese and combine with the chicken and remaining cheddar. you could probably mash them together with a utensil, but i went straight for it with my hands. stuff the shells with your cream cheese chicken cheddar cheese mixture. arrange stuffed shells in a greased pan and smother them in the cheese sauce. bake at 350 degrees for about a half hour.

Creamy Burrito Casserole

Creamy Burrito Casserole 1 lb ground beef 1/2 onion, chopped 1 package taco seasoning 6 large flour tortillas 1 can refried beans 2 -3 cups shredded taco cheese or cheddar cheese 1 can cream of mushroom soup 4 ounces sour cream Brown beef and onion; drain. Add taco seasoning and stir in refried beans. Mix soup and sour cream in a separate bowl. Spread 1/2 sour cream mixture in the bottom of a casserole dish. Tear up 3 tortillas and spread over sour cream mixture. Put 1/2 the meat bean mixture over that. Add a layer of cheese. Repeat the layers. Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

Pasta salad

Pasta salad 1 box noodles 1 C miracle whip 1/2 C mayo I just added a few shakes of garlic salt, black pepper,paprika,salt and 2T of sugar and vinegar. Cut up celery,carrots,green pepper,cucumber. Mix together and chill couple hours before .YUMMMM

Strawberry Pie

Strawberry Pie 3 Tablespoons cornstarch 1 cup sugar 1 1/2 cups water 3 oz box strawberry Jell-O 2 cups sliced strawberries Pre-bake a 10" pie shell Line bottom of pie shell with the sliced strawberries. Combine cornstarch, sugar and water in small saucepan. Bring to a boil and simmer, stirring constantly, until thickened. Add the Jell-O and stir until dissolved. Pour over the strawberries and refrigerate until set. Serve with whipped cream

Cilantro Chili Chicken Skewers

Cilantro Chili Chicken Skewers 2 pounds boneless/skinless chicken thighs or breast meat 1/4 cup extra virgin olive oil 6 cloves garlic, minced 3/4 bunch fresh cilantro (save remaining for garnish) 1 teaspoon salt & pepper Sweet chili sauce for basting Soak skewers in water for 20 minutes to prevent burning. Cut chicken into 1" cubes and place into bowl. Add olive oil, garlic and cilantro in a food processor and pulverize. Pour the marinade into the bowl with the chicken, add teaspoon of salt and pepper and marinate overnite if possible. Preheat the grill to medium heat and coat with oil. Remove chicken from the refrigerator and put 5-6 pieces of chicken on each skewer. Cook for 4-5 minutes on each side. Brush chili sauce on chicken just before done cooking to create a nice glaze.
