MEXICAN TORTILLA CASSEROLE
1 lb Hamburger
1/2 c Diced Onion
1 pk Taco Seasoning
1 can Refried Beans, warmed
1 c Prepared Rice
1 c Mexican Blend Corn, drained
2 c Shredded Cheddar
4-5 Large Tortillas
8 oz Chunky Salsa
Spray springform, round cake pan, or casserole with cooking spray.
Brown hamburger and onion, drain. Add taco seasoning and cook as directed.
Lay 1 tortilla in bottom of the pan and spread 1/3 of beans on top. Add 1/3 meat and some cheese.
2nd layer: Tortilla, 1/2 of rice, 1/2 of salsa and 1/2 of corn and some cheese.
3rd layer: Tortilla, 1/3 of beans, 1/3 of meat and some cheese.
4th layer: Tortilla, beans, meat, corn, salsa, rice and cheese.
Bake at 350, covered with foil for 40 minutes. Uncover and bake 10-15 minutes longer.
Let sit for 5 minutes before cutting.
Top with sour cream, diced tomatoes and shredded lettuce, if desired.
