Old Fashion Buttermilk Pancakes
2 cups all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
2 cups buttermilk
1/2 cup salted butter, melted and cooled slightly
In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Set aside. In a large bowl, whisk eggs. Whisk in buttermilk and melted butter. Stir flour mixture into buttermilk mixture until just combined. Spray griddle with non-stick spray; heat to medium. Pour 1/2 cup batter onto griddle; repeat until griddle is full with about 2" between pancakes. Cook pancakes until bubbles rise to surface and pop, about 2 minutes. Carefully flip pancakes; cook another 2 minutes. Transfer to serving plate.
