Cajun Potatoes and Sausage
Cajun Potatoes and Sausage
1 pound Cajun sausage, sliced
1 medium yellow onions, sliced
1/2 teaspoon garlic powder
1 tablespoon Cajun/ Creole seasoning
5 large russet potatoes, peeled and sliced into 1/2" slices
3 cups hot water
6 beef bouillon cubes
In a large measuring cup or bowl, dissolves bouillon cups in hot water; set aside. In Dutch oven, brown sausage over medium-high heat until golden brown and crisp around edges. Remove sausage with slotted spoon; set aside. Add onion to sausage grease; sauté for 5 minutes. Add garlic and Cajun seasoning; continue cooking for 2 more minutes. Add potato; stir until coated with onions and seasonings. Add water bouillon mixture; bring to boil. Reduce heat to medium; continue simmering, uncovered, for 15 minutes; stirring occasionally. Stir in sausage, reduce heat to low. Cook, uncovered, until potatoes are tender; stirring occasionally.
