ENGLISH MUFFIN BREAD
5 cups all-purpose flour
2 envelopes rapid rise yeast
4 teaspoon sugar
2 teaspoon salt
1/4 teaspoon baking soda
2 cups milk
1/2 cup water
cornmeal for dusting
Combine 2 1/2 cups of flour, yeast (not dissolved), sugar, salt and baking soda in a large mixing bowl. Heat milk and water until 120°-130°. Add the milk and water to the flour mixture. Beat on medium speed for 2 minutes. Stir in the remaining flour and mix till batter is stiff.
***(dough will be sticky to touch, this recipe was mixed with a dough hook on a Kitchen Aid mixer)
Spread in 2 loaf pan that has been grease and sprinkled with cornmeal.
Cover and let rise until double in size for approximately 45 minutes. (until it doubles in size). Bake in a preheated over at 400° for 25 minutes or golden brown.
Can add 1 1/2 to 2 teaspoons of Cinnamon.
