Boneless chicken breast cut into medium pieces
sprinkle with garlic powder
onion powder
salt
crushed red pepper & chili powder.
Fry in butter (I used olive oil). Don't use anymore butter\oil than what is needed to cook chicken until it's about 3/4 done. Cook on medium heat till browned. Remove form pan. Saute half medium yellow onion in butter\oil drippings, add 1 can cream of chicken soup and milk (I filled the soup can with milk) stir around, add chicken back to this and saute about 5 minutes. Add more seasonings if needed. Serve over noodles. Can easily double for large family.

1 lb rotini pasta
6 slices bacon, diced
1 tablespoon butter
4 boneless skinless chicken breast halves, cut into bite-size pieces
2 tablespoons all-purpose flour
1 (1/2 ounce) packet ranch dressing mix
2 cups milk
2 bags of shredded sharp cheddar cheese
salt and pepper(whatever seasoning you prefer)
Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.
Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but one tablespoon of bacon drippings from the pan.
Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.
Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in 1 bag of cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted.
Top with remainder of cheese and bacon and bake until cheese is melted

2 lbs ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers
1 (10 ounce) can diced tomatoes with mild green chilies
1 (16 ounce) jar taco sauce
2 (16 ounce) cans refried beans
12 (8 inch) flour tortillas
9 ounces shredded colby cheese
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium heat, saute the ground beef for 5 minutes.
Add the onion and garlic, and saute for 5 more minutes.
Drain any excess fat, if desired.
Mix in the olives, green chile peppers, tomatoes with green chile peppers, taco sauce and refried beans.
Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish.
Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese.
Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.

4 boneless chicken breast halves
1 cup fat free mayonnaise or greek yogurt
1/2 cup freshly grated parmesan cheese
1 1/2 teaspoons seasoning salt
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
Mix mayonnaise, cheese and seasonings.
Spread mixture over chicken breast and place in baking dish.
Bake at 375°F for 45 minutes.

1 package Golden Oreos (36 cookies)
6 tablespoons butter, melted
8 ounces softened cream cheese
1 cup powdered sugar
1 (16-ounce) container Cool Whip, divided
2 packages (3.4 ounce each) instant cheesecake pudding mix
3 cups milk
3½ cups sliced strawberries
Crush the entire package of Oreos. A food processor would work great for this - I don't have one, so I just placed my cookies in a gallon sized Ziplock bag and crushed them with a rolling pin. When the cookies are fine crumbs, transfer them to a large bowl and mix in 6 tablespoons of melted butter. Press the cookie mixture into a 9x13 pan and refrigerate while you prepare the remaining layers.
Next, beat together 1 cup of powdered sugar, the cream cheese, and 1 cup of Cool Whip. Spread over your cookie layer.
For the next layer, mix together the pudding mix, milk, and another 1 cup of Cool Whip. Spread over the cream cheese layer.
Layer the sliced strawberries on top, and spread the remaining Cool Whip on top.
Keep refrigerated until ready to serve.

3/4 bag(s) ziti noodles,
1 lb of ground beef
1 pkg taco seasoning,
1 c water
1/2 pkg cream cheese
1 1/2 c shredded cheese (mexican mix)
Boil pasta until just cooked. Brown ground beef and drain. Mix taco seasoning and 1 cup of water w/ ground beef for 5 min. Add cream cheese to beef mixture, and stir until melted and remove from heat.
Put pasta in casserole dish and mix in 1 cup cheese. Top pasta/cheese with beef mixture and gently mix, top w/ remaining cheese. Bake at 350* uncovered for 15-20 minutes

1 tablespoon olive oil
1 medium onion, chopped
1 medium green bell pepper, chopped
5 stalks celery, chopped
2 cups chicken broth
1 cup brown rice
4 cans black-eyed peas with liquid
1 can diced tomatoes and green chiles
1 can diced tomatoes
2 cloves garlic, finely chopped
Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, and celery until tender. Pour in the chicken broth, and mix in rice, black-eyed peas with liquid, diced tomatoes and green chiles, diced tomatoes, and garlic. Bring to a boil, reduce heat to low, and simmer 45 minutes, or until rice is tender. Add water if soup is too thick.
