Tex-Mex Stew
Tex-Mex Stew
1 lb stew meat
3 large potatoes, chopped
3 carrots, sliced
1 onion, chopped
1 tomato, chopped
1/2 cup frozen corn kernels
1 can (14 oz) beef broth
1 can (14 oz) diced tomatoes
1/2 cup water
1 pkg taco seasoning
1/2 tsp salt
Cornstarch slurry -- 1 tbsp corn starch and 2-3 tbsp water
Combine all ingredients, except for the slurry in a crock pot. Cover and cook on high for 4-6 hours or on low for 6-8.
20 minutes before the end of the cooking time, add the corn starch slurry, stir well and replace lid for the remaining cooking time.

l lb ground beef
1 onion, chopped
1 can (14 oz) diced tomatoes (or Rotel if you want more heat)
1 8 oz can tomato sauce
1 cup frozen corn
1/2 cup water
1 1/2 tsp chili powder
1 tsp oregano
1 cup uncooked macaroni
1/2 cup shredded Tex-Mex or sharp cheddar cheese
In a large skillet, brown the ground beef with the chopped onion, until the beef is no longer pink. Drain and return back to the skillet.
Add tomatoes, sauce, water, corn and spices to the beef/onion mixture. Stir to mix well and bring to a soft boil.
Add in the dry macaroni, stir to combine and then lower to a simmer. Place lid on the skillet, and cook for 15-20 minutes until the macaroni is cooked.
Add shredded cheese to the top of each serving.
Mini Donut Muffins

1/2 cup white sugar
1/4 cup butter, softened
3/4 tsp cinnamon
1/2 cup milk
1 tsp baking powder
1 cup flour
Sugar Coating
1/4 cup melted butter
1/2 cup white sugar
1 tsp cinnamon
Preheat oven to 375F. Prepare a 24 mini muffin cup pan.
Cream together sugar, butter and cinnamon (from first ingredient list) in a bowl. Add in milk, and combine well.
Add in flour and baking powder, mixing only until they are combined. Do not over mix.
Fill the prepared mini muffin tin cups about half full. (I got 17 mini muffins from my batch)
Bake for 15-18 minutes.
Allow to cool slightly before removing them from the baking pan.
While the mini muffins are cooling, place melted butter into one bowl, and combine the sugar and cinnamon in a 2nd bowl.
Coat each mini muffin completely with the melted butter, and then roll them in the cinnamon sugar. Place on a baking rack for the sugar to set.

Crockpot Honey Cola Pork Chops
4-6 pork chops
salt and pepper
1 cup honey
1 can of cola
Season pork chops with salt and pepper.
Brown chops in skillet, on both sides. You do not have to cook all the way through.
Place chops in the crockpot.
Pour 1 cup of honey over top of the chops.
Pour the can of cola over top of the honey. Do not mix.
Cook on high for 4-6 hours or low for 6-8.

Veggie Salad with Jalapeno Dressing
Dressing:
2 tbsp finely chopped jalapeno
1/4 cup mayonnaise
1/2 cup sour cream
2 tbsp white wine vinegar
1 tsp celery seed
1/4 tsp each salt and pepper
Salad
1 small pkg frozen corn
2 tomatoes, chopped
4-5 stalks celery chopped
1 medium cucumber, chopped
1/2 medium red onion, chopped
Chop all vegetables in the same relative size.
Mix dressing ingredients and combine with vegetables.
Refrigerate to chill before serving for at least an hour. Even better the next day!
Amish Cinnamon Bread

1 cup butter, softened
2 cups sugar
2 eggs
4 cups flour
2 cups buttermilk
2 tsp baking soda
Streusel and Topping
2/3 cup sugar
2 tsp cinnamon
Preheat oven to 350F.
Cream together butter and sugar. Add in eggs and beat well. Add in flour, buttermilk and baking soda.
Place 1/4 of the batter in the bottom of 2 prepared loaf pans.
Mix together streusel filling. Reserve 4 tbsp. Sprinkle the rest equally on the top of each of the batter in the loaf pans.
Spread the rest of the batter equally, on top of the cinnamon/sugar mixture in each pan.
Take a clean knife, and drag it, swirling, through the layers. Sprinkle remaining cinnamon/sugar on top.
Bake for 50 minutes, or until toothpick inserted inside comes out clean. Allow to cool for a few minutes before removing from pans.
Grilled Caesar Burgers
Grilled Caesar Burgers
1 pound ground beef
1 1/2 tbsp dried parsley
1/2 cup Caesar dressing (divided)
1/2 tsp salt
1 small sweet onion, sliced tin
romaine lettuce leaves
tomato slices
freshly shaved Parmesan cheese
4 hamburger buns
Mix together ground beef, 1/2 of the Caesar dressing and salt.
Form into 4 patties.
Place sliced onion on a piece of foil and drizzle remaining Caesar dressing, and fold up into a packet.
Place the packet on the grill, at the same time as you do the hamburger patties. Grill patties for 5-7 minutes on each side. The onions should be done in about ten minutes.
Garnish the burgers with the onions, lettuce, tomato and Parmesan cheese.
