Easy Garlic Chicken

Easy Garlic Chicken 4 boneless skinless chicken breasts 4 garlic cloves, minced 4 tablespoons brown sugar 1 tablespoon olive oil additional herbs and spices, as desired Preheat oven to 450°F Line a baking dish or cookie sheet with aluminum foil and lightly coat with cooking spray or lightly brush with oil. In small sauté pan, sauté garlic with the oil until tender. Remove from heat and stir in brown sugar. Add additional herbs and spices as desired. Season chicken with salt and pepper. .Place breasts in a prepared baking dish and cover with the garlic and brown sugar mixture. Bake uncovered for 15-30 minutes, or until juices run clear. Cooking time will depend on the size and thickness of your chicken.

Pizza Meatloaf Cups

Pizza Meatloaf Cups 1 egg, beaten 1⁄2 cup pizza sauce 1⁄4 cup seasoned bread crumbs 1⁄2 teaspoon italian seasoning 1 1⁄2 lbs ground beef 1 1⁄2 cups shredded part-skim mozzarella cheese additional pizza sauce (optional) In a bowl, combine the egg, pizza sauce, bread crumbs and Italian seasoning. Fold beef into mixture and mix well. Divide meat mixture into 12 greased muffin cups. Press mixture into bottom and up the sides. Fill center with cheese. Bake at 375°F for 15-18 minutes or until meat is no longer pink. Serve immediately with additional pizza sauce and cheese if desired. Or cool, place in freezer bags and freeze for up to 3 months. To use frozen pizza cups:. Thaw in the refrigerator for 24 hours. Heat in microwave on high for 2-3 minutes or until heated through. Top with additional pizza sauce and cheese if desired.

Ranch Potatoes

Ranch Potatoes 8 -10 medium potatoes, peeled and cut into 1/2 inch cubes 1 can cream of mushroom soup, undiluted 1 1⁄4 cups milk 1 envelope ranch dressing mix 1 1⁄2 cups shredded cheddar cheese, divided salt and pepper 6 slices bacon, cooked and crumbled Add the potatoes to a saucepan. Add water to cover. Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain. Place drained potatoes into a greased 13x9 inch baking dish. In a bowl, mix together the soup, milk, salad dressing mix, 1 cup cheese, salt and pepper to taste; pour over potatoes. Sprinkle crumbled bacon and the remaining cheese over the top. Bake, uncovered, at 350° for 25-30 minutes or until potatoes are tender.

Ranch Chicken

Ranch Chicken 6 boneless skinless chicken breast halves 3⁄4 cup dry breadcrumbs 3⁄4 cup bottled creamy ranch dressing Dip chicken into ranch dressing then into bread crumbs. Place in a 9x13 baking dish. Bake at 400 degrees for 30 to 45 minutes.

Pizza Casserole

Pizza Casserole 1 lb bow tie pasta 1 lb Jimmy Dean sausage, 'country mild' (or other flavor if desired) 1 large onion, medium size chopped (cooked with sausage) 2 (26 ounce) jars spaghetti sauce (I used Bertolli's Tomato & Basil) 1⁄2 lb cubed cooked ham 1⁄2-1 lb of sliced pepperoni 3 (8 ounce) shredded mozzarella cheese 6 tablespoons of grated parmesan cheese 1 teaspoon garlic powder 1 teaspoon dried oregano Cook pasta in boiling water until al denté. Cook sausage, garlic powder and oregano with onions until the juices run clear. In a lightly greased 9x13x3 inch pan, pour a small amount of sauce to lightly coat bottom. Layer ingredients in the order listed below. 1st layer-1/3 of the pasta, 1/3 remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, sausage and onions. 2nd layer-1/2 of the remaining pasta, 1/2 remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese, ham. 3rd layer-all remaining pasta, all remaining sauce, 1 bag of mozzarella cheese, 2 Tablespoons parmesan cheese,all the pepperoni(completely covering the entire top with pepperoni). Bake at 375°F for 40 minutes. Let sit for 5 minutes before serving.

Million Dollar Pie

Million Dollar Pie 2 graham cracker pie crusts... 1 (14 ounce) cans Eagle Brand Condensed Milk 1 (10 ounce) cans crushed pineapple 9 ounces Cool Whip 3 tablespoons lemon juice 3/4 cup pecans Mix all ingredients. Pour into crusts. Garnish with extra pecans if you wish. Refrigerate 2 hours before serving.

No Bake Oatmeal Fudge Cookies

No Bake Oatmeal Fudge Cookies 3 cups rolled oats 1 tsp vanilla 1 cup chopped nuts(optional) 1/2 cup butter 2 cups sugar 1/2 cup evaporated milk 1/2 cup cocoa powder Combine oats, vanilla and nuts and set aside. Over medium low heat, combine sugar, cocoa and evaporated milk; bring to a full rolling boil, stirring constantly. Boil for 2 minutes. Remove from heat, add butter, stir until melted. Quickly add oat mixture and stir until well mixed. Drop by spoonful onto wax paper; let cool 2 hours to set.
