Squash Fritters
1 large yellow squash, grated
2 green onions, chopped (or 2 T. grated onion)
1 egg
6-8 T. self rising flour
1/4 tsp. each salt and pepper
2 T. butter
4 T. oil
Combine squash, onion, egg, flour, salt and pepper. In a 10-12" skillet, add 1 T. butter and 2 T. oil and heat over medium heat. Once butter is melted drop mixture by heaping spoonful's into pan. Cook the fritters about 2-3 minutes per side and until golden brown. Remove to a paper towel lined plate to drain. Continue with second batch by adding in remaining butter and oil. Repeat cooking process. I served mine with a side of ranch dressing.
