Ramen with Sweet and Sour Pork
Ramen with Sweet and Sour Pork
1/4 cup low sodium soy sauce
1 1/2 teaspoons sesame oil
1/4 teaspoon white pepper
2 teaspoons chili garlic sauce
1 1/2 tablespoons sugar
3 teaspoons rice wine vinegar
1 pound pork loin chops , sliced into thin pieces
4 (3 ounce) packages Top Ramen, flavor packet discarded
2 tablespoons Hoisin sauce
2 tablespoons water
2 tablespoons vegetable oil
3 garlic cloves , minced
2 teaspoons grated fresh ginger
3/4 cup frozen sweet baby peas , thawed
salt and pepper
In a large bowl, whisk together the soy sauce, sesame oil, white pepper, chili garlic sauce, sugar, and rice wine vinegar. Add in the pork and toss to coat. Let marinate while you cook the noodles.
Bring a large pot of water to boil; add the ramen and cook until al dente, separating the noodles as they cook; about 3 minutes. Drain and rinse under cold water. Drizzle a little bit of oil over them and toss to prevent sticking.
In a small bowl, whisk together the Hoisin sauce and water.
Heat oil in a large skillet over medium-high. Add in garlic and ginger; stir for 10-20 seconds. Add in the pork along with the marinade and cook, stirring, until it is almost cooked, about 2 minutes. Add in the peas and Hoisin sauce and salt and pepper to taste; heat through. Toss in the noodles and gently mix to combine. Taste and adjust seasoning if necessary.
Serve in bowls, making sure to get some of those peas that fall to the bottom of the pan
