BLUEBERRY CREAM CHEESE BLINTZES
8 oz. cream cheese, softened
1/2 c powdered sugar, sifted
1 tsp vanilla extract
1 1/4 c frozen blueberries
1lb. Egg roll skins
Beat cream cheese with an electric mixer. Mix in powdered sugar and vanilla, and beat again until smooth. Mix in blueberries. Fill egg roll skins with the mixture, and fold as directed on the package. Fry until golden brown and serve.
