Slow Cooker Rotisserie Chicken

Slow Cooker Rotisserie Chicken 1 (4-5 lb) Whole Chicken insides removed, washed and patted dry mayonnaise rotisserie rub (recipe below) aluminum foil Place 4 foil balls in the slow cooker. Rub mayonnaise all over the chicken. Top with rotisserie rub. Carefully place chicken on top of the foil balls. Cover and cook on high for 4 to 4 1/2 hours or until chicken is cooked through. (Everyone’s slow cooker cooks differently. A meat thermometer is the best way to know when it is done.) Rotisserie Rub for 1 (5 lb) chicken 1 tsp salt 1 tsp paprika 1 tsp brown sugar 1/2 tsp onion powder 1/2 tsp thyme 1/2 tsp garlic powder 1/2 tsp black pepper I am so excited to try some of my other flavor combinations for this method!

Sweet Soy-Glazed BBQ Chicken

Sweet Soy-Glazed BBQ Chicken 4 boneless/skinless chicken breast 3/4 cup honey 3/4 cup ketchup 1/2 cup reduced sodium soy sauce 3-4 cloves garlic minced 2 Tbsp butter 1/2 tsp Tabasco sauce Combine honey, ketchup, soy sauce, melted butter, garlic and tabasco sauce in a bowl. Pour over chicken in a large baking dish. Bake at 400 degrees for 1 hour or until chicken is done. (I turned them and basted them 3 times during the cook time. When chicken is done, place in a covered platter to keep warm. Pour the sauce from the pan into a small pot and bring to a boil stirring occasionally until sauce reaches desired thickness. Pour glaze over chicken and serve.

Cheddar Jalapeno Beer Bread

Cheddar Jalapeno Beer Bread 3 cups self-rising flour 2 Tablespoons granulated sugar 12 ounces of beer (light colored) 1 cup shredded extra sharp cheddar cheese 1 jalapeño, diced (more if you would like) 2 Tablespoons butter Preheat oven to 375 degrees. Grease a 9X5 inch loaf pan with butter and set aside. Whisk together flour, sugar in a large mixing bowl. Add beer and stir until moistened. Fold in cheese and jalapeño. Put into prepared loaf pan. Bake for 40-45 minutes or until a toothpick comes out clean. Remove from oven and top with 2 tablespoons of butter. let it melt. Cool for 10-15 minutes before removing from pan and slicing.

Little King Salad

Little King Salad 1 head lettuce, iceburg or Romaine 1/4 lb chopped ham 1/4 lb chopped turkey 1/4 lb chopped hard salami 1/4 lb chopped pepperoni 1 red onion sliced 2 tomatoes sliced 1 cup provolone cheese, sliced or shredded Italian Hard Rolls (I couldnt find these, so I used ciabatta bread, it worked great!) Dressing: 3/4 c Olive oil 1/4 c tarragon vinegar 1/8 t pepper 1/2 t dried oregano 1 t salt 1/4 t garlic powder Mix up dressing, pour over salad ingredients, toss well. Before you serve throw in torn up pieces of Italian hard rolls.

Garlic Butter Baby Brussels Sprouts

Garlic Butter Baby Brussels Sprouts 12 oz bag of frozen baby Brussels sprouts, thawed and sliced in half 1/2 onion, sliced 2 T minced garlic 1 Tbsp olive oil 1 Tbsp butter Garlic salt Pepper 1 Tbsp Dales seasoning sauce Melt butter and olive oil in a skillet over medium high heat. Add Brussels sprouts and onions. Saute for about 8 minutes or until they start to brown. Add the garlic for the last 2 minutes. Season with garlic salt & pepper to taste. Finish off with the Dales. Serve. (This recipe can be easily doubled, just cook it a little bit longer)

Soy-Balsamic Glazed Green Beans

Soy-Balsamic Glazed Green Beans 1 (18oz) family size bag of frozen whole green beans (Mine were PICTSWEET brand, found in Walmart) 1/4 cup unsalted butter 2 cloves garlic, minced 1/4 cup reduced sodium soy sauce 1 Tbsp balsamic vinegar Melt butter in a large skillet over medium heat. Cook green beans until they start to brown slightly, (about 15 minutes) Add minced garlic, stirring constantly for 2 more minutes. Toss with soy sauce, balsamic vinegar and cook until liquid cooks out. Taste to adjust seasoning. Enjoy!

Homemade Pay Day Candy Bars

Homemade Pay Day Candy Bars 3 cups salted peanuts 3 TB butter 2 cups peanut butter chips 2 cups mini marshmallows 1 can sweetened condensed milk Pour half your peanuts into a greased 11x7 pan and spread so they cover the bottom. In a small pan melt butter and chips until well combined. Add condensed milk and marshmallows and stir until all mixed. Pour over peanut mixture. Top with remaining peanuts and let cool (refrigerate if desired).
