Hamburger and Potato Casserole
1 lb. lean ground beef
3 cups thinly sliced potatoes (either peeled or with thin skins)
1/2 cup chopped onions
1 can Cream of Mushroom soup
3/4 cup milk
1 1/2 cups shredded cheese
salt and pepper to taste
Preheat oven to 350 degrees and lightly grease an 11 x 7 (2 quart) glass baking dish. In medium skillet, cook the onions and ground beef until done. Drain the grease. In a medium bowl, mix together the milk, soup, salt and pepper. Layer half of the potatoes, soup, cheese and then the hamburger meat. Repeat with the rest of the potatoes, soup, hamburger meat and then the cheese. Cover with aluminum foil and bake for 1 to 1 1/2 hours or until the potatoes are tender.

Frozen Cranberry Pineapple Salad
1 (12 oz.) bag fresh cranberries, finely chopped
1 1/4 cups white sugar
2 (8 oz.) cans crushed pineapple, well drained
1 (10 oz.) package miniature marshmallows
1 pint (2 cups) heavy whipping cream
In a medium bowl, mix together the chopped cranberries and the sugar.
Cover and refrigerate at least 8 hours, or overnight. With an electric mixer, whip cream until stiff.
In a large bowl, combine cranberries and pineapple. Fold in whipped cream and marshmallows.
Pour into a large, airtight container and freeze until ready to serve. Thaw slightly (or completely if you prefer) before serving.

Slow-Cooked Beef and Ravioli
1 1/2 lbs. lean ground beef
1 onion, chopped
1 clove garlic, minced
1 (15 oz.) can tomato sauce
1 can stewed tomatoes
1 tsp. oregano
1 tsp. Italian seasoning
salt/pepper
10 oz. frozen spinach, thawed (I used fresh spinach)
16 oz. bowtie pasta, cooked
1/2 cup parmesan cheese, shredded
1 1/2 cup mozzarella, shredded
Brown ground beef with onion and garlic. Put in crock-pot and add sauce, tomatoes and seasonings. Cook for 6-7 hours on low.
Add the last 4 ingredients during the last 30 minutes of cooking and turn crock-pot to high. I added the fresh spinach, pasta, parmesan and 1 cup of the mozzarella and I mixed it all up really well. Then I added the last 1/2 cup of mozzarella to melt on the top.

Sloppy Joe and Grilled Cheese All In One
1/2 cup leftover sloppy joes
2 thick slices of cheddar or marble cheese
2 slices of bread (I used Rye, I like the thinner bread for grilled cheEse)
1 tbsp butter
Spread butter on one side of each piece of bread. Place one piece of bread, butter side down in the frying pan.
Place on slice of cheese on the piece of bread. Top with leftover sloppy joes (cold works best, so that you can spread it evenly without it sliding out). Top with remaining slice of cheese and piece of bread, butter side out.
Heat pan over medium to medium-high heat and cook until the first side is golden brown. Flip sandwich and cook until the second side is equally golden brown.

Base
1 18.3 oz. fudge brownie mix
1 egg
6 tablespoons melted butter
1/4 cup water
Pecan Pie Filling
3 large eggs
1 cup light corn syrup
1/3 cup packed light-brown sugar
1/4 cup granulated sugar
4 tablespoons butter, melted
2 teaspoon vanilla extract
1/2 teaspoon salt
2 cups pecan halves
Topping
1 8 oz. cream cheese, room temperature
3 eggs
1 teaspoon vanilla
½ cup butter, melted
3 cups confectionery sugar
Preheat oven to 325 degrees. Spray a 9 x 13 pan.
Add all of the base ingredients to a mixing bowl. Mix until it comes together. If some won’t mix in add another tablespoon of water. This batter will be really thick.Spread it out on the bottom of the pan. Pat the dough into place.
In another mixing bowl add all of the filling ingredients except the pecans. Whisk together until all is blended together. This will take a couple of minutes with a mixer or a whisk. Add the pecans. Stir in. Spread out on top of brownie base, getting the pecans as even as you can.
Mix together the cheesecake mixture in a mixing bowl until thoroughly combined. Drop by large tablespoons over pecan filling. Carefully put this in the oven.
Bake until the center shakes slightly. If you touch down on the cheesecake part it will feel firm. It will just be starting to turn brown. Start checking this at about 50 minutes (it may take an additional 10-15 minutes based upon your oven).

1/2 lb. ground beef (or ground turkey or chicken)
1/4 onion (chopped)
1 10 oz. can whole green chilies (or 2 roasted fresh green chiles)
1 1/2 cups cheddar cheese
2 eggs
3/4 cups milk
1/8 cup flour
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper
Preheat oven to 375 F. Cook hamburger meat and onion. Drain, then add cumin, salt, and pepper.
Spray your pan lightly with non-stick cooking spray, then line the bottom of your pan with whole green chiles (chop extra green chiles for later).
Layer meat over green chiles. Top with cheese and chopped green chiles. Whisk together eggs and milk, then add flour and mix well. Pour this mixture over dish. Bake for 35 to 40 minutes.
Serve immediately

Crust:
1 box butter-recipe cake mix
1 egg
1/2 c (1 stick) butter, melted
Filling:
1 8 oz. pkg cream cheese, softened
2 eggs
1 tsp. pure vanilla extract
1 16 oz. box powdered sugar
1/2 c. (1 stick) butter, melted
1 c. chocolate chips
Preheat oven to 350 degrees. Light grease a 9×13 in. baking pan.
In a bowl, combine cake mix, egg, and butter with an electric mixer. Mix well. Pat into the bottom of prepared pan and set aside. Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla. Dump powdered sugar and beat very well. Reduce the speed of mixer and slowly pour in melted butter. Mix well. Stir in the chocolate chips. Pour filling onto cake mixture and spread evenly. Bake for 40-50 minutes. You want to center to be a little gooey, so don’t bake it past that point! Remove from oven and allow to cool completely. If you want to drizzle melted chocolate over the top allow it to cool for at least 15 minutes and then drizzle over. Allow to cool for at least another hour and then cut into bars.
