Old-Fashioned Meatloaf

Old-Fashioned Meatloaf 1 lb ground beef 1 1/4 tsp salt 1/4 tsp black pepper 1 egg, lightly beaten 1/2 cup onion, chopped 1/2 cup bell pepper, chopped 8 oz canned diced tomatoes with juice 1/4 cup quick cooking oats For topping: 1/3 cup ketchup 2 Tbsp brown sugar 1 Tbsp prepared mustard Combine ground beef, salt, pepper, egg, onion, bell pepper, diced tomatoes with juice, and oats & shape into a loaf and placed into a Pam sprayed meatloaf pan. Combine topping ingredients and spread evenly over the top. Bake at 350 degrees for 1 hour or until meatloaf is done. Allow to rest for 10 minutes before slicing. Enjoy! ***I can never find an 8 oz. can of diced tomatoes, so I always just get the 15 oz. can, and use about half.
